Weird one... PBC & Jennie O Boneless Turkey Breast

My first turkey breast on a PBC. Not happy at all with the turkey, my local butcher let me down. I have two 2.5 lb Jennie O Boneless Turkey Breasts "oven ready" - https://www.jennieo.com/products/oven-ready-boneless-turkey-breast/

What advice would you give to make these turn out as best they can? I'm defrosting them in the fridge right now. I was hoping to have a fancier turkey for my first PBC Thanksgiving, but it is what it is. Any advice to help me would be greatly appreciated!
